Cheesy Zucchini & Carrot Patties Recipe

Ingredients:

  • 2 medium zucchinis, grated
  • 2 medium carrots, grated
  • 1 small onion, finely chopped (optional)
  • 1/2 cup grated cheese (mozzarella, cheddar, or a mix)
  • 2 eggs
  • 3–4 tbsp flour or breadcrumbs (as needed for binding)
  • 2 tbsp chopped parsley or coriander
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp turmeric or paprika (optional)
  • 1 tbsp olive oil or melted butter (for brushing before baking)

Instructions:

  1. Prepare the Vegetables:
    • Grate zucchini and carrots.
    • Sprinkle a pinch of salt and let sit for 10 minutes.
    • Squeeze out excess water using your hands or a clean cloth.
  2. Make the Mixture:
    • In a large bowl, combine grated zucchini, carrots, cheese, eggs, flour/breadcrumbs, parsley, salt, and spices.
    • Mix until it forms a thick, moldable mixture. Add more breadcrumbs if it’s too wet.
  3. Shape the Patties:
    • Take portions of the mixture and shape into oval or round patties (like in the photo).
    • Place them on a parchment-lined baking tray.
  4. Bake or Pan-Fry:
    • To Bake: Brush with olive oil and bake at 190°C (375°F) for 20–25 minutes, flipping halfway through.
    • To Pan-Fry: Heat a little oil in a pan and cook each side until golden brown.
  5. Serve:
    • Serve warm with yogurt sauce, garlic dip, or ketchup.
