Ingredients:
3 eggs
1 cup sugar (150g)
1/2 cup vegetable oil (100ml)
1 cup milk (150ml)
1 cup fine semolina (150g)
1 cup white flour (150g)
1 baking powder (10g) + 1/2 teaspoon vanilla
A pinch of salt
For decoration:
Crushed pistachios
Grated coconut
For the syrup:
2 cups sugar (300g)
2 cups water (300ml)
1 lemon slice
Directions:
- In a small bowl, mix the eggs, sugar, and vanilla well until they double in volume and become creamy.
- Add the oil and milk and mix.
- Add the semolina, flour, yeast, and a pinch of salt and mix gently until the mixture is well combined.
- Empty the mixture into a greased mold and sprinkle the crushed pistachios and coconut over it.
- Bake in a preheated oven at 180°C for 35 to 40 minutes, until golden brown and puffed.
Prepare the syrup:
In a couscoussier, add the water, sugar, and a lemon slice and let it cook for 10 minutes until slightly set.
Finishing touch:
Once the cake is hot, drizzle it with the cold syrup.
Garnish it with the pistachios and coconut and let it rest for a while to allow it to fully absorb the syrup.
