Ingredients:

  • 2 cups leftover mashed potatoes (or freshly made)
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped green onions
  • 1/4 cup all-purpose flour
  • 1 egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter (for frying)

Instructions:

  1. Prepare the Mashed Potatoes: If you don’t have leftover mashed potatoes, make fresh ones. Let them cool slightly before using.
  2. Mix the Ingredients: In a large bowl, combine the mashed potatoes, shredded cheddar cheese, chopped green onions, flour, egg, garlic powder, onion powder, salt, and pepper. Mix until everything is well combined. The mixture should be thick but slightly sticky.
