Ingredients:

For the Dough:

  • 4 cups (500 g) all-purpose flour
  • 1 packet (7 g) instant yeast
  • 1 cup (240 ml) warm milk

  • 1 large egg
  • ⅓ cup (75 g) unsalted butter, softened
  • ½ tsp salt

  • ½ cup (100 g) unsalted butter, softened
  • ½ cup (100 g) brown sugar

  • 1 egg (for egg wash)

Instructions:

  1. Make the dough – In a large bowl, mix warm milk, yeast, and sugar. Let sit for 5 minutes until foamy. Add egg, butter, salt, and flour. Knead until smooth (about 8–10 minutes). Cover and let rise 1 hour, or until doubled in size.
  2. Prepare filling – In a small bowl, mix softened butter, brown sugar, and cinnamon into a smooth paste.
  3. Roll out dough – On a floured surface, roll dough into a rectangle (about 16×12 inches). Spread filling evenly over dough.
  4. Fold & cut – Fold the dough into thirds (like folding a letter). Slice into strips (about 1 inch wide). Twist each strip, then coil it into a knot and tuck the ends underneath.
  5. Second rise – Place knots in a muffin tin or on a baking sheet. Cover and let rise for 30 minutes.
  6. Bake – Brush with egg wash, sprinkle with pearl sugar if desired, and bake at 375°F (190°C) for 15–18 minutes, until golden brown.
  7. Cool & serve – Allow to cool slightly before serving warm.
