Hummingbird Bread with Heavenly Cinnamon Cream Cheese Frosting

Ingredients:

  1. 3 ripe bananas, mashed
  2. 1/2 cup granulated sugar
  3. 1/4 cup brown sugar
  4. 1 large egg
  5. 1/4 cup canola or vegetable oil
  6. 1 1/2 cups all-purpose flour
  7. 1 teaspoon baking powder
  8. 1 teaspoon baking soda
  9. 1/2 teaspoon salt
  10. 1/2 cup sweetened shredded coconut
  11. 1/2 cup diced pineapple, patted dry
  12. 1/2 cup chopped pecans
    For the Cream Cheese Frosting:

    1.1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
    Prepare the Bread Batter:
    2.1. In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, egg, and oil. Mix well.
    2.2. Add the flour, baking powder, baking soda, and salt to the banana mixture. Stir until just combined.
    2.3. Fold in the shredded coconut, diced pineapple, and chopped pecans.
    Bake the Bread:
    3.1. Pour the batter into the prepared loaf pan.
    3.2. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
    Make the Cream Cheese Frosting:
    4.1. In a separate bowl, beat together 8 oz cream cheese, 1/4 cup softened butter, 2 cups powdered sugar, and 1 teaspoon cinnamon until smooth and creamy.
