Golden Roasted Lemon Herb Potatoes :


Ingredients:

  • 2 lbs (about 900g) baby potatoes or Yukon Gold potatoes, cut into wedges
  • 3 tbsp olive oil
  • 3 tbsp fresh lemon juice (about 1 large lemon)
  • 1 tbsp lemon zest
  • 3 garlic cloves, minced
  • 1 tsp dried oregano (or 1 tbsp fresh)
  • 1 tsp dried thyme (or rosemary)
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper
  • ½ cup chicken broth (or vegetable broth for vegetarian)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat Oven: Set to 400°F (200°C).
  2. Prepare Potatoes: Place potato wedges in a large bowl. Add olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper. Toss to coat evenly.
  3. Arrange in Baking Dish: Spread potatoes in a single layer in a baking dish. Pour broth over them (this keeps them moist and flavorful while roasting).
  4. Roast: Bake uncovered for 45–55 minutes, stirring halfway through, until potatoes are golden brown and tender.
  5. Garnish & Serve: Sprinkle with fresh parsley and serve warm as a side dish.
