Crispy Fried Mashed Potato Balls

Ingredients:

  • 2 cups cold mashed potatoes (leftovers work best)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 green onions, finely chopped (optional)
  • Salt & pepper, to taste
  • 1 egg, beaten
  • 1 cup breadcrumbs (panko for extra crunch)
  • ½ cup all-purpose flour
  • Oil, for frying

Instructions:

  1. In a bowl, mix together mashed potatoes, shredded cheese, green onions, salt, and pepper.
  2. Scoop about 1–2 tablespoons of mixture and roll into balls.
  3. Roll each ball in flour, then dip into beaten egg, and coat with breadcrumbs.
  4. Heat oil in a deep pan over medium-high heat.
  5. Fry potato balls in batches until golden brown and crispy (about 2–3 minutes).
  6. Remove and drain on paper towels.
  7. Serve hot with your favorite dipping sauce (ketchup, ranch, or spicy mayo).

Tips:

  • For extra flavor, mix in cooked bacon bits, garlic powder, or herbs.
  • You can also air fry at 375°F (190°C) for 12–15 minutes until golden.
