Classic Meatloaf with Ketchup Glaze
🧾 Ingredients
Meatloaf
- 700 g ground beef (or 50/50 beef & lamb)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- ¾ cup breadcrumbs
- ⅓ cup milk
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce (optional)
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- ½ tsp dried thyme or Italian seasoning
- 2 tbsp chopped parsley
Glaze
- 4 tbsp ketchup
- 2 tbsp brown sugar or honey
- 1 tsp mustard (optional)
👩🍳 Instructions
- Prep
- Preheat oven to 180°C (350°F).
- Lightly grease a loaf pan or line with parchment.
- Mix
- In a large bowl, combine all meatloaf ingredients.
- Mix gently (don’t overmix—keeps it juicy).
- Shape & Glaze
- Shape into a loaf in the pan.
- Mix glaze ingredients and spread half on top.
- Bake
- Bake uncovered for 40 minutes.
- Remove, spread remaining glaze, return to oven.
- Bake another 15–20 minutes until cooked through.
- Rest
- Let rest 10 minutes before slicing.
🥔 Creamy Mashed Potatoes (Side)
- Boil 1 kg potatoes until tender
- Mash with:
- 40 g butter
- ½ cup warm milk
- Salt & pepper
- Finish with chopped parsley and a little melted butter
🥦 Veggies
- Steam broccoli & carrots
- Toss with butter, salt, and pepper

- For extra juicy meatloaf, add 1–2 tbsp olive oil to the mix
