Classic Meatloaf with Ketchup Glaze

🧾 Ingredients

Meatloaf

  • 700 g ground beef (or 50/50 beef & lamb)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • ¾ cup breadcrumbs
  • ⅓ cup milk
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce (optional)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp dried thyme or Italian seasoning
  • 2 tbsp chopped parsley

Glaze

  • 4 tbsp ketchup
  • 2 tbsp brown sugar or honey
  • 1 tsp mustard (optional)

👩‍🍳 Instructions

  1. Prep
    • Preheat oven to 180°C (350°F).
    • Lightly grease a loaf pan or line with parchment.
  2. Mix
    • In a large bowl, combine all meatloaf ingredients.
    • Mix gently (don’t overmix—keeps it juicy).
  3. Shape & Glaze
    • Shape into a loaf in the pan.
    • Mix glaze ingredients and spread half on top.
  4. Bake
    • Bake uncovered for 40 minutes.
    • Remove, spread remaining glaze, return to oven.
    • Bake another 15–20 minutes until cooked through.
  5. Rest
    • Let rest 10 minutes before slicing.

🥔 Creamy Mashed Potatoes (Side)

  • Boil 1 kg potatoes until tender
  • Mash with:
    • 40 g butter
    • ½ cup warm milk
    • Salt & pepper
  • Finish with chopped parsley and a little melted butter

🥦 Veggies

  • Steam broccoli & carrots
  • Toss with butter, salt, and pepper

💡 Tips

  • For extra juicy meatloaf, add 1–2 tbsp olive oil to the mix
  • Want it spicy? Add chili flakes or hot sauce to the glaze
  • Café-style: serve with gravy or roasted garlic mashed potatoes
