Cheesy Jalapeño Cornbread with Creamed Corn

Cheesy Corn Skillet Bread (Savory Cornbread)

Ingredients

Dry ingredients

  • 1 cup cornmeal (polenta, fine)
  • 1 cup all-purpose flour
  • 1 tbsp sugar (optional)
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ tsp black pepper

Wet ingredients

  • 2 eggs
  • 1 cup buttermilk (or 1 cup milk + 1 tbsp lemon juice)
  • ⅓ cup melted butter or oil
  • ½ cup grated cheese (cheddar or mozzarella)

Add-ins (as shown in picture)

  • 1 cup corn kernels (fresh, frozen, or canned)
  • ½ cup cooked sausage cubes OR ham (optional)
  • 1 small onion, finely chopped
  • 2 tbsp chopped green onion
  • 2 tbsp chopped fresh coriander or parsley

Instructions

1. Prepare the batter

  1. In a bowl, mix:
    • cornmeal
    • flour
    • baking powder
    • salt & pepper
  2. In another bowl, whisk eggs + buttermilk + melted butter.
  3. Pour wet mixture into dry mixture and stir gently.
  4. Fold in:
    • cheese
    • corn kernels
    • sausage/ham cubes
    • chopped onion
    • herbs

The batter will be slightly thick.

2. Cook in a skillet

  1. Preheat oven to 180°C (350°F).
  2. Grease a cast-iron skillet or round baking pan.
  3. Pour the batter into the pan and spread evenly.
  4. Bake 25–35 minutes until:
    • golden on top
    • edges are crispy
    • center is firm

3. Serve

Sprinkle with:

  • fresh herbs
  • cracked black pepper

Cut into wedges and enjoy warm.

Perfect with soup, chili, or a dipping sauce!
