This simple and delicious recipe combines creamy scrambled eggs, crispy bacon, and fresh veggies, all served in crisp lettuce cups. Perfect for a light breakfast or a healthy lunch, it’s a low-carb, protein-packed dish that’s full of flavor.


Ingredients:

  • 4 large eggs
  • 2 slices of bacon
  • 4 leaves of butter lettuce (or any lettuce of your choice)
  • 6 cherry tomatoes, halved
  • 1 tablespoon of green onions, chopped
  • Salt and pepper, to taste
  • Paprika (optional, for garnish)

Instructions:

  1. Prepare the bacon:
    • Cook the bacon in a skillet over medium heat until crispy, about 3-4 minutes per side. Remove and drain on a paper towel. Once cooled, crumble or cut into small pieces.
  2. Cook the scrambled eggs:
    • In a bowl, whisk the eggs with a pinch of salt and pepper.
    • In the same skillet used for bacon, pour the eggs and cook over low heat, stirring gently to form soft scrambled eggs. Remove from heat once they’re cooked to your desired consistency.
  3. Assemble the cups:
    • Place a leaf of butter lettuce on each plate as the base.
    • Spoon a portion of the scrambled eggs into each lettuce leaf.
    • Top with crumbled bacon, cherry tomatoes, and a sprinkle of chopped green onions.
    • Optionally, sprinkle with a dash of paprika for extra flavor and color.
  4. Serve:
    • Serve immediately and enjoy your fresh, healthy breakfast or snack!
