Garlic Parmesan Roasted Brussels Sprouts

Ingredients

  • 1 ½ lbs (680 g) Brussels sprouts, trimmed and halved
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs (panko recommended)
  • ½ tsp paprika (optional)
  • ½ tsp salt
  • ¼ tsp black pepper
  • Pinch of red pepper flakes (optional)
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash, trim, and halve Brussels sprouts. Pat dry to remove moisture.
  3. In a bowl, toss Brussels sprouts with olive oil, garlic, salt, pepper, and paprika. Add Parmesan and breadcrumbs, mixing well.
  4. Spread Brussels sprouts cut side down on the baking sheet in a single layer.
  5. Roast 20–25 minutes, flipping halfway, until golden brown and crispy.
  6. Remove from oven, sprinkle with parsley and extra Parmesan, then serve hot.
