Seafood Stew with Garlic Toast

A rich tomato-based seafood stew loaded with shrimp, mussels, clams, fish, and scallops, served with golden garlic toast for dipping. Perfect for cozy dinners or special occasions.
Ingredients:
For the Stew
2 tbsp olive oil
1 medium onion, finely chopped
3 cloves garlic, minced
1 fennel bulb, thinly sliced (optional)
1 red bell pepper, diced
1 can (14 oz) diced tomatoes
4 cups seafood stock (or fish stock)
1 cup dry white wine
1 bay leaf
1 tsp smoked paprika
½ tsp red pepper flakes (optional)
Salt & black pepper, to taste
½ lb firm white fish fillets (cod, halibut, or sea bass), cut into chunks
½ lb large shrimp, peeled & deveined
½ lb mussels, cleaned
½ lb clams, scrubbed
½ lb scallops (optional)
2 tbsp fresh parsley, chopped
For Garlic Toast
1 baguette, sliced
3 tbsp olive oil (or melted butter)
2 cloves garlic, halved
Pinch of sea salt
Instructions :
1.Heat olive oil in a large pot over medium heat add onion fennel bell pepper and garlic sauté until softened about 5 minutes
2.Add diced tomatoes seafood stock white wine bay leaf smoked paprika red pepper flakes salt and pepper bring to a simmer cook 15 minutes
3.Add fish chunks simmer 5 minutes then add shrimp mussels clams and scallops cover and cook 5–7 minutes until shellfish open and shrimp turn pink discard any unopened shells
4.Stir in parsley adjust seasoning keep warm
5.For garlic toast slice baguette brush with oil or butter toast until golden rub with garlic halves sprinkle sea salt
6.Serve hot stew with garlic toast on the side
