Ingredients
FOR THE PORK CHOPS:
✔ 4 boneless pork chops (1-inch thick for the best juiciness!)
✔ 3 tbsp butter (for a rich, buttery flavor!)
✔ 4 cloves garlic, minced (adds deep, savory taste!)
✔ 1 tbsp olive oil (for an even, golden sear!)
✔ ½ tsp dried thyme (adds an earthy, aromatic touch!)
FOR THE SMOOTH MASHED POTATOES:
✔ 4 large potatoes, peeled & chopped (Yukon Gold or Russet work best!)
✔ ½ cup heavy cream (for a super smooth texture!)
✔ 2 tbsp butter (adds creaminess & flavor!)
✔ Salt, to taste
Preparation
1️⃣ PREPARE THE MASHED POTATOES
- In a large pot, add the peeled and chopped potatoes and cover with cold water.
- Add a pinch of salt and bring to a boil over medium-high heat.
- Reduce heat and simmer for 15–20 minutes, or until the potatoes are fork-tender.
- Drain and return potatoes to the pot.
- Add heavy cream, butter, and salt, then mash until smooth and creamy.
- Cover and set aside while you prepare the pork chops.
2️⃣ SEAR THE PORK CHOPS
- Pat dry the pork chops with a paper towel and season both sides with salt, pepper, and thyme.
- Heat 1 tbsp olive oil in a large skillet over medium-high heat.
- Add pork chops and sear for 3–4 minutes per side, or until golden brown.
- Remove the pork chops and set them aside on a plate (they will finish cooking in the sauce).
3️⃣ MAKE THE BUTTERY GARLIC SAUCE
- In the same pan, reduce heat to medium and add 3 tbsp butter.
- Stir in the minced garlic and cook for 30 seconds, stirring frequently (don’t let it burn!).
- Return the pork chops to the pan, spooning the garlic butter sauce over the top.
- Cover and let cook for 3–5 minutes until the pork reaches 145°F (63°C) internally.
4️⃣ SERVE & ENJOY!
- Plate the smooth mashed potatoes and place a juicy, buttery garlic pork chop on top.
- Spoon extra garlic butter sauce over the pork for added richness.
- Garnish with fresh parsley or thyme for an elegant finish!
