This refreshing and flavorful shrimp dish reminds me of my grandma’s cooking, and I’m so excited to share it with you! It’s the perfect balance of tangy, savory, and a little spicy. Here’s the recipe:

Ingredients:

  • 1 lb (450g) shrimp, peeled and deveined
  • 1 large cucumber, diced
  • 1 medium tomato, diced
  • 1 small red onion, finely chopped
  • 2-3 limes, sliced
  • 1-2 jalapeños, sliced (optional for heat)
  • 1/2 cup cilantro, chopped
  • 2 cups tomato juice
  • Salt and pepper, to taste

Instructions:

  1. In a large bowl, combine the shrimp, cucumber, tomato, onion, and cilantro.
  2. Pour in the tomato juice and stir gently to combine all ingredients.
  3. Add the lime slices and jalapeños (if using), then season with salt and pepper.
  4. Let the mixture chill in the refrigerator for about 30 minutes to allow the flavors to meld together.
  5. Serve cold with extra lime slices on top for garnish.
