Baked Bacon Jalapeño Popper Egg Rolls
A delicious fusion of creamy, spicy jalapeño popper filling wrapped in crispy egg roll wrappers and baked to golden perfection. Perfect as an appetizer or snack!

Ingredients
- 12 egg roll wrappers
- 8 oz cream cheese, softenedCheese
- 1 cup shredded cheddar cheese
- 6 strips bacon, cooked and crumbled
- 4 large jalapeños, seeded and finely diced
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and black pepper, to taste
- Olive oil spray (for baking)
Instructions

- Preheat Oven & Prep Baking Sheet
- Preheat oven to 400°F (200°C).
- Line a baking sheet with parchment paper and set aside.
- Make the Filling
- In a mixing bowl, combine softened cream cheese, shredded cheddar, crumbled bacon, diced jalapeños, garlic powder, onion powder, salt, and pepper.
- Mix well until fully combined.Cheese
- Assemble the Egg Rolls
- Lay an egg roll wrapper on a clean surface in a diamond shape (one corner facing you).
- Spoon about 2 tablespoons of filling onto the center.
- Fold the bottom corner over the filling, then fold in the sides, and roll tightly.
- Dab a little water on the edges to seal. Repeat with remaining wrappers.
- Bake to Crispy Perfection
- Place egg rolls seam-side down on the baking sheet.
- Lightly spray the tops with olive oil spray for extra crispiness.
- Bake for 15-20 minutes, flipping halfway, until golden brown and crispy.
