Ingredients
- 2 pork tenderloins (or 1 pork loin, about 1ā1.2 kg)
- 4 cloves garlic, finely chopped
- 2 tbsp Dijon or whole-grain mustard
- 3 tbsp olive oil
- 2 tbsp soy sauce (or Worcestershire sauce)
- 1 tbsp honey or brown sugar
- 1 tbsp fresh rosemary, finely chopped
- 1 tsp dried thyme (or oregano)
- ½ tsp black pepper
- ½ tsp salt (adjust if using soy sauce)
- Optional: 1 tsp apple cider vinegar or lemon juice
Marinade
In a bowl or small jug, mix:
- Olive oil
- Mustard
- Soy sauce
- Honey
- Garlic
- Rosemary
- Thyme
- Pepper
- Vinegar (optional)
Prepare
- Place pork in a baking dish.
- Pour the marinade over the meat.
- Turn to coat well.
- Cover and marinate at least 30 minutes (best: 2ā12 hours in the fridge).
Bake
- Preheat oven to 190°C (375°F).
- Bake uncovered for 30ā35 minutes (tenderloin)
or 45ā55 minutes (pork loin). - Baste once or twice with the juices.
- Internal temperature should reach 63°C / 145°F.

- Rest meat 10 minutes before slicing.
