Ingredients

  • 1 cup cornmeal (yellow or white)
  • 1 cup all-purpose flour

  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup milk (or buttermilk for richer flavor)
  • 2 eggs
  • ⅓ cup vegetable oil or melted butter
  • 2 tbsp butter (for the skillet)

Instructions

  1. Preheat oven to 200°C / 400°F
    Place a cast-iron skillet in the oven with the 2 tbsp butter inside so it melts and heats up.
  2. Mix dry ingredients
    In a bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. Mix wet ingredients
    In another bowl, whisk milk, eggs, and oil (or melted butter).
  4. Combine
    Pour wet ingredients into dry and mix just until combined (don’t overmix).
  5. Pour into hot skillet
    Carefully remove skillet from oven, swirl butter to coat, then pour in the batter.
  6. Bake
    Bake 20–25 minutes until golden brown and a toothpick comes out clean.
  7. Serve warm
