  • 600–700 g chicken thighs (or breast), cut into pieces
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 egg
  • 4–5 tbsp cornstarch (or mixture 50% cornstarch + 50% flour)
  • Oil for frying

For the sticky sauce

  • 2 tbsp butter
  • 3–4 garlic cloves, minced
  • 3 tbsp ketchup
  • 2 tbsp soy sauce
  • 2 tbsp gochujang (Korean chili paste)
  • 3 tbsp honey (or brown sugar)
  • 1 tbsp rice vinegar (or lemon juice)
  • Optional: ½ tsp chili flakes for extra heat

For serving

  • Chopped chives or parsley
  • Sesame seeds

👩‍🍳 Instructions

1️⃣ Season the chicken

  1. In a bowl, mix chicken with salt, pepper, garlic powder, and paprika.
  2. Add the egg and mix well.
  3. Add cornstarch and coat until each piece is covered.

2️⃣ Fry the chicken

  1. Heat oil to 170–180°C.
  2. Fry chicken pieces 5–7 minutes until lightly golden.
  3. Remove, let rest 2 minutes, then fry again 2–3 minutes for extra crispiness.
Double-frying gives that Korean crispy texture!

3️⃣ Make the sticky sauce

  1. In a pan, melt butter.
  2. Add minced garlic and cook 30 seconds.
  3. Add ketchup, soy sauce, gochujang, honey, and vinegar.
  4. Cook 2–3 minutes until thick and glossy.

4️⃣ Coat the chicken

  1. Add fried chicken to the pan.
  2. Toss until fully coated and sticky.

5️⃣ Garnish

Sprinkle with sesame seeds or chopped parsley/chives.
