Ingredients
- 4 large potatoes
- 2–3 tbsp olive oil
- 1 tsp paprika (sweet or smoked)
- ½ tsp garlic powder
- ½ tsp black pepper
- ½ tsp salt (or to taste)
- ½ tsp dried thyme or oregano (optional)
- Chopped parsley (for garnish)
Instructions
- Prep potatoes: Peel (optional) and cut into thin sticks.
- Soak (optional but recommended): Soak in cold water for 20–30 minutes to remove excess starch. Drain and pat very dry.
- Season: In a bowl, toss potatoes with olive oil, paprika, garlic powder, salt, pepper, and herbs.
- Bake: Spread in a single layer on a lined baking tray.
- Bake at 220°C / 425°F for 35–45 minutes, flipping halfway, until golden and crispy.
- Finish: Sprinkle with chopped parsley and extra salt if needed. Serve hot.
Tips for extra crispiness
- Don’t overcrowd the tray.
- Use convection/fan mode if available.
- Add a pinch of cornstarch before baking for ultra-crisp fries.
