Mini Meatloafs with Savory Ketchup Glaze

Perfect for meal prep or a quick family dinner, they are made with ground meat, breadcrumbs, and a savory glaze on top. These mini-sized meatloafs cook faster than the traditional large one, making them ideal for busy evenings.

Ingredients:

  • 1 lb (450 g) ground beef or turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 egg
  • 1/4 cup finely chopped onion
  • 1/4 cup ketchup (for the glaze)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup shredded cheese (optional, for extra flavor)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper or spray it with cooking spray.
  2. Prepare the meat mixture: In a large bowl, combine the ground meat, breadcrumbs, milk, egg, chopped onion, garlic powder, onion powder, salt, and pepper. If you’re using cheese, add it to the mixture as well. Mix until all ingredients are well incorporated.
  3. Shape the mini meatloafs: Divide the mixture into small portions and shape each portion into a small loaf shape. Place them on the prepared baking sheet.
  4. Make the glaze: In a small bowl, mix ketchup with a little extra seasoning (optional). Spoon a tablespoon of the glaze on top of each mini meatloaf.
  5. Bake: Place the mini meatloafs in the preheated oven and bake for about 20-25 minutes or until the meat is cooked through and the internal temperature reaches 160°F (71°C).
  6. Garnish and serve: Once cooked, remove the meatloafs from the oven and let them rest for a few minutes. Garnish with fresh parsley and serve hot.
