Ingredients

  • 200 g almond flour
  • 120 g sugar
  • 1 large orange (zest + 2 tbsp juice)
  • 2 egg whites
  • 1 tsp baking powder
  • 1 tsp vanilla or almond extract
  • Powdered sugar for coating
  • Orange marmalade / apricot jam for topping

1️⃣ Mix the dry ingredients

In a bowl combine:

  • almond flour
  • sugar
  • baking powder

Grate in the zest of one whole orange.

Add 2 tbsp orange juice.

2️⃣ Add the egg whites

Add egg whites (not beaten) and vanilla/almond extract.

Mix until you get a soft, sticky dough.

3️⃣ Shape the cookies

  • Form small balls with damp hands.
  • Roll each ball generously in powdered sugar.
  • Using your finger or the back of a spoon, make a small indentation on top.

4️⃣ Bake

Bake on parchment paper at:

170°C for 12–14 minutes

They should crack beautifully and remain soft inside.

5️⃣ Add the jam

Right after baking, while warm, fill the indentation with:

🍊 orange marmalade (best match)

or

🍑 apricot jam

Let them cool before serving.
