Crispy Zucchini & Ham Rolls (Fried)
Ingredients
- 2 medium zucchinis
- 200 g sliced ham (or turkey/ chicken slices)
- 150 g cheese (mozzarella, gouda, cheddar – sliced or shredded)
- 2 eggs
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan (optional but delicious)
- 2–3 tbsp chopped parsley
- Salt & pepper
- Oil for frying
Instructions
1. Prepare the zucchini
- Slice zucchinis lengthwise using a mandolin into thin strips.
- Lightly salt and let them rest 10 minutes to soften.
- Pat dry with a paper towel.
2. Make the rolls
- Place a slice of ham on each zucchini strip.
- Add a bit of cheese at one end.
- Roll tightly and secure the seam (no toothpick needed if wrapped snugly).
3. Bread the rolls
- Beat the eggs with salt and pepper.
- Mix breadcrumbs with Parmesan and parsley.
- Dip each roll in egg → then coat in breadcrumbs.
- Press well so the coating sticks.
4. Fry
- Heat oil and fry rolls on all sides until golden and crispy
OR - Bake at 200°C for 20–25 min, drizzling them with a little oil.
5. Serve
