Crispy Creamy Custard Rolls

Ingredients

For the pastry

  • Puff pastry sheets
  • 1 egg (for brushing)

For the cream filling

  • 2 cups (500 ml) milk
  • 3 tbsp cornstarch
  • 3 tbsp sugar
  • 1 tbsp butter
  • 1 tsp vanilla

For coating

  • 1 beaten egg
  • Breadcrumbs
  • Sugar for sprinkling

Instructions

1. Make the cream filling

  1. In a pot, whisk together:
    • milk
    • cornstarch
    • sugar
  2. Cook on medium heat, stirring constantly, until thick.
  3. Remove from heat and add:
    • butter
    • vanilla
  4. Let cool completely (it must be thick).

2. Prepare the pastry

  1. Cut puff pastry into squares (as shown in the image).
  2. Pipe or spoon a line of the custard filling onto each square.
  3. Roll each square into a tight cylinder.
  4. Seal the edges well.

3. Coat

  1. Dip each roll in beaten egg.
  2. Roll in breadcrumbs until fully coated.

4. Cook

Option A — Fry (crispiest, like the photo)

  • Fry in hot oil (170–180°C) until golden.
  • Drain on paper towels.

Option B — Bake

  • Brush with oil.
  • Bake at 200°C for 15–18 minutes until golden.

5. Finish

  • Sprinkle with sugar while still warm.
  • Serve and enjoy the creamy inside + crispy outside!
