🌶️ Cheesy Enchiladas

✨ Ingredients

  • 8 small tortillas (corn or flour)
  • 2 cups cooked shredded chicken or beef or beans (your choice)
  • 1½ cups enchilada sauce (red)
  • 2–3 cups shredded cheese (cheddar, mozzarella, or Mexican blend)
  • Sour cream or mayonnaise (for drizzling)

🧑‍🍳 Instructions

1. Prepare the Filling

  • In a bowl, mix your chosen filling (chicken, beef, or beans) with a few tablespoons of enchilada sauce and a handful of cheese.

2. Roll the Enchiladas

  • Place a spoonful of filling inside each tortilla.
  • Roll tightly and place them seam-side down in a baking dish with a thin layer of enchilada sauce at the bottom.

3. Add Sauce & Cheese

  • Pour the remaining enchilada sauce evenly over the rolled tortillas.
