Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 cup sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup sour cream
  • 1 tsp vanilla extract
  • 1 ½ cups fresh blueberries
  • ½ cup sliced almonds
  • Powdered sugar for dusting (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan. Line the bottom with parchment paper for easy removal of the cake.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Set aside.
  3. Cream Butter and Eggs: In a large bowl, cream together the softened butter and sugar until light and fluffy, about 3 minutes. Beat in the eggs, one at a time, followed by the vanilla extract.
  4. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream. Start and end with the dry ingredients, mixing until just combined. Do not overmix.
  5. Add Blueberries: Gently fold the fresh blueberries into the batter, being careful not to crush them.
  6. Bake: Pour the batter into the prepared cake pan and smooth the top. Sprinkle sliced almonds on top for a crunchy, golden finish. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool and Serve: Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Once cooled, dust with powdered sugar (optional) and slice.

Enjoy your homemade Blueberry Almond Cake with a cup of tea or coffee!
