Blender Coconut Cake

Blender Coconut Cake

INTRODUCTION

This cake is the perfect mix of simplicity and flavor — creamy inside with a golden, slightly crispy top. You don’t need to whisk, fold, or beat anything by hand; just toss everything into a blender. It’s ideal for when you want to impress without the stress.

Ingredients

  • 3 eggs
  • 1 cup sugar
  • 2 cups milk
  • 1 cup grated coconut (fresh or desiccated)
  • 1 cup flour
  • 3 tbsp butter (melted)
  • 1 tbsp baking powder
  • 1 tsp vanilla extract
  • A pinch of salt

(Optional: sprinkle extra grated coconut on top before baking for a toasted finish.)

Instructions

  1. Preheat the oven to 180°C (350°F). Grease and lightly flour a medium cake pan.
  2. Blend the ingredients: In a blender, combine the eggs, sugar, milk, butter, and vanilla. Blend until smooth.
  3. Add dry ingredients: Add the flour, coconut, baking powder, and salt. Blend again just until mixed — don’t overdo it.
  4. Pour into the pan and let it sit for a minute to remove any bubbles.
  5. Bake for about 40–45 minutes or until the top turns golden and a toothpick comes out clean.
  6. Cool and serve: Let it cool before slicing. It tastes even better chilled.
