Carrot Salad with Pineapple

Ingredients:

3 cups grated carrots

1 ½ cups pineapple chunks (fresh or canned, drained)

½ cup raisins

½ cup mayonnaise (or Greek yogurt for a lighter version)

1–2 tbsp sugar or honey (optional, to taste)

1–2 tbsp lemon juice

Pinch of salt

Optional: ¼ cup crushed walnuts or sunflower seeds for crunch


🍴 Instructions:

  1. Prep the carrots: Peel and grate the carrots, then place them in a large bowl.
  2. Add fruits: Mix in the pineapple chunks and raisins.
  3. Make the dressing: In a small bowl, combine mayonnaise (or yogurt), lemon juice, a pinch of salt, and sugar/honey if desired. Stir until smooth.
  4. Combine: Pour the dressing over the carrot mixture and toss until everything is evenly coated.
  5. Chill: Refrigerate for 30 minutes before serving for best flavor.
