Seafood Salad

Ingredients

For the Salad:

1 lb imitation crab meat (flake-style or chunks), chopped

1 cup cooked small shrimp, peeled and deveined

2 stalks celery, finely diced

¼ cup red onion, finely diced

¼ cup sweet pickle relish (optional)

For the Dressing:

¾ cup mayonnaise

1 tablespoon fresh lemon juice

1 teaspoon Old Bay seasoning (or your favorite seafood seasoning)

½ teaspoon garlic powder

Salt and freshly ground black pepper, to taste

For Garnish (optional):

1 tablespoon fresh parsPrepare the Ingredients: Chop the imitation crab into bite-sized pieces. If your shrimp are large, chop them into similar-sized pieces. Finely dice the celery and red onion.

Combine Salad Ingredients: In a large mixing bowl, gently combine the chopped crab, shrimp, diced celery, red onion, and sweet pickle relish (if using).

Make the Dressing: In a separate small bowl, whisk together the mayonnaise, lemon juice, Old Bay seasoning, garlic powder, salt, and pepper until smooth and well-combined.

Toss the Salad: Pour the dressing over the seafood and vegetable mixture. Using a spatula, gently fold everything together until all components are evenly coated. Be careful not to overmix.

Chill: Cover the bowl with plastic wrap and refrigerate for at least 1 hour. This crucial step allows the flavors to meld and develop.

Serve and Enjoy: Before serving, give the salad a quick stir. Garnish with fresh parsley if desired. Serve chilled on croissants, with crackers, in lettuce cups, or as a side dish.
