Keto Cajun Shrimp & Sausage Stuffed Cabbage
This keto-friendly dish is packed with bold Cajun flavors, featuring juicy shrimp and smoky sausage stuffed into tender cabbage leaves. Perfect for a low-carb meal that is both satisfying and full of flavor!
INGREDIENTS:
For the cabbage:
- 2 medium green cabbages
- 2 tbsp olive oil or butter
- Salt & pepper, to taste
For the filling:
- 12 oz smoked sausage
- ½ lb shrimp, peeled & deveined
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp Cajun seasoning
- 1 tsp paprika
- ½ tsp cayenne pepper (optional for extra heat)
- 1 cup cauliflower rice (or regular rice if not keto)
- 1 tbsp olive oil or butter (for sautéing)
INSTRUCTIONS:
- Prepare the cabbage:
- Cut the cabbage heads in half, remove the core, and separate the leaves. Blanch the cabbage leaves in a pot of boiling salted water for 2-3 minutes, until softened. Drain and set aside to cool.
- Alternatively, you can roast the cabbage halves in the oven with olive oil and salt, cut side down, for 20-25 minutes at 400°F (200°C) for a roasted flavor.
- Make the filling:
- In a large pan, heat the olive oil or butter over medium heat. Add the smoked sausage and cook until browned, about 5-7 minutes. Remove the sausage from the pan and set it aside.
- In the same pan, add the diced onions, bell peppers, and garlic. Sauté until softened, about 5 minutes.
- Add the shrimp to the pan and cook for 3-4 minutes until they turn pink and opaque.
- Stir in the Cajun seasoning, paprika, cayenne pepper, and cauliflower rice (or regular rice). Cook for another 3-4 minutes, allowing the flavors to meld together.
- Stuff the cabbage:
- Place a few spoonfuls of the filling into each cabbage leaf, folding the sides in and rolling it up tightly. Arrange the stuffed cabbage rolls in a baking dish.
- Drizzle with olive oil or butter and season with salt and pepper. Cover the baking dish with foil.
- Bake:
- Preheat the oven to 350°F (175°C) and bake the stuffed cabbage for 20-25 minutes until heated through.
- Serve:
