Ingredients
For the Brownie Base:
1 box brownie mix (plus ingredients listed on box) or homemade brownies
½ cup chopped walnuts (optional)
For the Cheesecake Filling:
24 oz cream cheese, softened (3 packages)
1 cup granulated sugar
3 large eggs
1 tsp vanilla extract
½ cup sour cream
For the Topping:
1 cup hot fudge sauce (warmed slightly)
1 cup caramel sauce
Whipped cream
½ cup chopped peanuts or walnuts
Maraschino cherries
Sprinkles (optional)
Instructions
- Prepare the Brownie Base
Preheat oven to 350°F (175°C).
Line a 9-inch springform pan with parchment paper and grease the sides.
Prepare brownie batter according to package or recipe. Spread evenly into pan. Bake for about 20 minutes—just until set but not fully done (it will bake more with cheesecake). Let cool slightly.
- Make the Cheesecake Layer
In a large mixing bowl, beat cream cheese and sugar until smooth and creamy.
Add eggs one at a time, mixing well after each addition.
Mix in vanilla and sour cream until combined.
Pour cheesecake batter over the cooled brownie base.
- Bake the Cheesecake
Reduce oven heat to 325°F (160°C).
Place the cheesecake pan into a larger baking pan and fill halfway with hot water for a water bath (to prevent cracks).
Bake for 50–60 minutes, until the edges are set and the center is slightly jiggly.
Turn off oven, crack door open, and let cheesecake rest inside for 1 hour.
- Chill
Remove cheesecake from oven, cool completely, then refrigerate for at least 4 hours or overnight.
- Add Sundae Toppings
Before serving, drizzle cheesecake with warm hot fudge and caramel sauce.
Pipe or spoon whipped cream around edges, sprinkle with nuts, add cherries, and finish with sprinkles if desired.
