- Preheat the oven (or air fryer):
- Oven: 400°F (200°C)
- Air Fryer: 375°F (190°C)
- Blend the cottage cheese:
- Add the cottage cheese to a blender or food processor and blend until completely smooth and creamy. This helps the texture become uniform.
- Combine the cheeses:
- In a bowl, mix the blended cottage cheese with shredded mozzarella until well combined. You’ll get a sticky cheese mixture.
- Shape into sticks:
- Line a baking sheet with parchment paper or a silicone mat.
- Scoop out portions of the mixture and shape into 8 sticks (or you can make them flat like fries for extra crispiness).
- Bake or air fry:
- Oven: Bake for 18–22 minutes until golden brown and crispy on the outside.
- Air Fryer: Cook for 10–12 minutes, flipping halfway, until crispy.
- Cool slightly:
- Let them cool for 5–10 minutes so they firm up before serving.
Optional (for extra crispiness):
- After baking, broil for 1–2 minutes for a golden top.
- Or coat with a little almond flour or grated parmesan before baking.
